Arishta (Armenian արիշտա) — a kind of home-made noodles, pilaf is made from it, used for refueling soup. Arishta is cooked on flour, water and salt, while getting a pretty steep dough. Each piece roll out a thickness of 1.5 mm, like pita bread, roll up rolls, which then cut into thin strips and dried. Dried arishta browned in a dry frying pan until a pinkish-golden hue. The variant without an egg is also used as a dish of a lean kitchen. Classic gravy to Arishte is ghee, matsun and garlic.
There are two varieties of Arishta: for lunch and for dessert. Of sweet Arishta, halva is prepared.
